Do not be discouraged if you don’t have a mixer or bread machine, we only bake by hand (batches of half a dozen loaves every few weeks) and the only addition to this recipe is about a cup of extra flour so it isn’t too wet to handle. When you first mix the dough it is actually a batter, simply leave to autolyse for five minutes then add enough flour to make a very soft dough, it will be tacky but not sticky or wet. It’s a pleasure to work with.
