Keep an eye out on this website (or bookstores if you are in Belgium or the UK, AUS, NZ) cos next year you will find a recipe for that vlaai in one of my books!

The bakery was on the corner of Nederkouter and Ketelvest, it is now a restaurant. I remember Mastellen and the Belgian brioches which are nothing like French brioches which is just what they called in Ghent, milkbread. Belgian brioches are what they call in England “ Danish pastries”. Should you ever go to Ghent on a weekend, get up early on a Sunday morning and go to the nearest good bakery for brioches. You have to get there before 8 if you want plenty of choice. Ask your hotel receptionist ( or better still your hotel manager) where the best baker is for brioches. Smakelijk. Enjoy.
P.S. I remember vlaai that my granddad made with “ peperkoek en kandijsiroop” and milk but I don’t know the recipe. My granddad was called Achiel.
